This giant drop of “water” is actually a form of rise cake, also named as Shingen Moshi, which is made with agar (or Chinese gelatin, Chinese isinglass, Japanese isinglass), a colloidal extract of algae that is a kind of analog to gelatin in Asian cuisine. The cake has a water base that comes from the Japanese Alps so that it’s called Mizu. If you order this cake, you had better eat it quickly, because it will dissolve like ice into sweet water after 30 minutes.
